Chocolate Avocado Mousse
Yup, you read it right: this chocolate mousse has avocado, the same avocado we use for our salads and guacamole… As I was making baby food my baby boy, I mixed an avocado with a banana… then I added some cereal and put it all in the food processor. It was so creamy and yummy! I decided to look for some recipes with avocado and after several tries I finally got the consistency I like in a mousse. This recipe contains no sugar, no eggs, no lactose. The texture is so creamy that no one will believe that it has avocado!!!

  1. 3 tablespoons cocoa powder
  2. 3 tablespoons coconut oil
  3. ½ cup bittersweet chocolate chips
  4. 1 teaspoon of instant coffee
  5. ¼ cup raisins
  6. 2 large ripe avocados
  7. ¼ cup soy milk (can be normal milk)
  8. 2 tablespoons maple syrup
  9. 3 tablespoons agave nectar
  10. 1 teaspoon vanilla
  1. In a double boiler melt the first four ingredients. Leave to the side.
  2. Put the remaining ingredients in a blender and blend them until you get a smooth mixture. Turn off the blender and with a spatula make sure that all the ingredients are incorporated. Add the chocolate mixture to the blender and blend until you get a creamy consistency. Pour desired amount into a bowl and refrigerate for 3 hours. Enjoy!
